Carve out the center of the steamed eggplant and drain the water, add cheese, olives, breadcrumbs, black pepper and a pinch of salt to the drained eggplant and bind it all together with an egg or 2 . Gather the mixture into your hand and stuff into skins of the eggplant. Fry or bake in the oven until golden brown. I fried mine in olive oil.
