Ingredients
- 4 pita bread
- 4 cups oyster mushrooms
- 3 tbsp extra virgin olive oil
- 4 sprigs of thyme
- 1 garlic clove
Feta Dressing:
- 100g feta from Triple “A” Cheese
- 2 tbsp plain yogurt
- 2 tsp 2% milk
- 1 garlic clove, minced
- 6 basil leaves
Method
In a pan, heat up olive oil and add garlic, thyme, and oyster mushrooms.
Let it cook and sear on both sides until crispy and golden brown. Remove from pan.
Puree all the ingredients for the feta dressing with a hand blender and set aside.
In a pan, warm up your pita bread.
Top with feta dressing and oyster mushrooms. Enjoy!
