Vegetarian feta Omelets
Feta
cheese omelets are a delightful addition to your breakfast
repertoire.
Ingredients: 3 eggs 2 tbs. milk 2
ounces crumbled Triple "A" Feta cheese 1 small cooked pepper (any
variety) or 3 cooked asparagus spears (cut in small cubes) or
1 green onion chopped or 3 tbs. of cooked chopped leeks
Directions: Beat 3 eggs in bowl with milk. Melt butter in
stick-free pan. Add egg mixture to saucepan at medium heat. Once partially
cooked add crumbled feta and vegetable of choice. Fold omelet once when
egg appears cooked. Place omelet on bed potato and enjoy. Top of page
Feta Pasta Salad

4 cups pasta
(penne, bowties, rotini) ¾ cup chopped green pepper ¾ cup chopped
red pepper 1 cup broccoli flowerets ½ cup black olives, pitted and
sliced 2 cups Triple A feta cheese diced
Dressing ½ cup
olive oil ¼ cup red wine vinegar 1 tablespoon oregano 1
tablespoon parsley 1 teaspoon sugar 1 teaspoon salt ¼ teaspoon
pepper
Boil pasta according to package directions. Combine all
dressing ingredients in a bowl and set aside. To the drained and cooled
pasta, add the green and red peppers, broccoli flowerets, black olives and
Triple A feta cheese. Pour dressing and mix thoroughly Refrigerate. Makes
6-8 servings. Top of

Triple "A"
Feta Spread
½ lb. Triple A Feta
2 tablespoons olive oil 2 tablespoons parsley 2 tablespoons
dill 2 tablespoons chopped green onions 1 small clove garlic,
minced
Combine all ingredients in a blender or processor. Blend
until smooth. Pour into a bowl and refigerate.
Yield: 1 ½ cups
