Nutritional Facts
Natural cheese is an excellent, concentrated source of many key nutrients. 1 oz of cheddar cheese provides 15% of your RDA requirements for protein and 20-25% of your RDA for calcium.

Equivalents
1 cup shredded cheddar or Swiss = 4 oz cheese
1 cup grated Parmesan or Romano = 3 oz cheese
1 cup crumbled blue = 4 oz cheese

Feta is made in many countries from the local milk (i.e., Cows, Sheep or Goats milk). Sheep's milk is preferred because it is so white and very creamy. The cheese is traditionally brine pickled for a number of days and then stored in a solution of brine for sale. Our feta is not brined for so long, therefore not so salty. We wax the cheese in a two tone green / natural wax. Feta is a semi-soft creamy textured cheese piquant, slightly acid and salty. It is an ideal cheese for using in cookery and delicious served with a tossed green salad with black olives.
